- 2 lobster tails (4-5oz) each
- Extra virgin olive oil
- 1 large shallot
- 1 Tablespoon Roasted Garlic
- 2 sprigs fresh thyme
- 1/3 cup mascarpone
- ¼ cup brandy
Instructions
- Clean Lobster tails, sauté the lobsters with the olive oil, shallots, roasted garlic and the thyme.
- Stir the mixture often until the lobsters are almost cooked (time varies on lobster size), deglaze the pan with the brandy (if using an electric stove, use a lighter or match to flame the liquid after added to pan to burn off the alcohol).
- Let cool, then transfer to a food processor and blend with the mascarpone cheese till smooth, season with salt and pepper.

- 2 cups pasta flour (finely ground flour)
- 1 cups blended whole eggs or ready eggs

- Add flour to bowl, mix in eggs. Blend until all of the egg is absorbed. Transfer the dough on to a working tabletop and work until fully formed.

- 3-4 cloves garlic sliced
- ½ sliced yellow onion

- 1-2 cloves chopped garlic
- 1 shallot
- Pinch of dried chili flakes
- Splash of vodka
- Spring of fresh thyme

- Sauté the shallot and garlic, deglaze the pan with the vodka.
- Cook until most of the liquid is gone to burn off the alcohol, add the marinara and chili flakes.
- Heat the butter and thyme in a separate saucepan, when the butter is hot add the lobster, reduce the heat and stir until cooked.
- Spread out the sauce on the bottom of a large dinner plate, add the cooked pasta into the lobster butter thyme sauce, and season with salt and pepper.
- Add the pasta and lobster on top of the sauce and finish with the thyme butter.
