Recipe: Lobster Mezzaluna Filling Ingredients

Ingredients

  • 2 lobster tails (4-5oz) each
  • Extra virgin olive oil
  • 1 large shallot
  • 1 Tablespoon Roasted Garlic
  • 2 sprigs fresh thyme
  • 1/3 cup mascarpone
  • ¼ cup brandy

Instructions

  1. Clean Lobster tails, sauté the lobsters with the olive oil, shallots, roasted garlic and the thyme.
  2. Stir the mixture often until the lobsters are almost cooked (time varies on lobster size), deglaze the pan with the brandy (if using an electric stove, use a lighter or match to flame the liquid after added to pan to burn off the alcohol).
  3. Let cool, then transfer to a food processor and blend with the mascarpone cheese till smooth, season with salt and pepper.

  • 2 cups pasta flour (finely ground flour)
  • 1 cups blended whole eggs or ready eggs

Instructions

  1. Add flour to bowl, mix in eggs. Blend until all of the egg is absorbed. Transfer the dough on to a working tabletop and work until fully formed.
  2. Wrap the mixture and let rest for 15-20 minutes)
  3. Unwrap and make pasta sheets with your pasta machine.
  4. Cut out circle forms in the pasta, place a small amount of the filling in the center, lightly spray with water or use egg whites to make sure the pasta stays together, fold in a half moon shape, pressing around the outside of the mezzaluna to ensure that all the air is worked out and its nice and pressed together.

  • 1.5 cup Roughly chopped stewed peeled tomatoes with juice
  • 3-4 cloves garlic sliced
  • ½ sliced yellow onion
  • 5 large basil leaves
  • 2 Tablespoons olive oil

Instructions

  1. In saucepot, lightly brown garlic in the olive oil, add onion.
  2. Cook the onions until tender with no color on the onions.

  1. Add the pasta to lightly salted, simmering water, be careful the water is not rapidly rolling as this can break up the pasta.

Ingredients

  • 1 lobster tail 4-5 ounces cleaned and sliced or chopped
  • 1-2 cloves chopped garlic
  • 1 shallot
  • Pinch of dried chili flakes
  • Splash of vodka
  • Spring of fresh thyme
  • Olive oil
  • 3 Tab of butter
  • Marinara Sauce (from above)

Instructions

  1. Sauté the shallot and garlic, deglaze the pan with the vodka.
  2. Cook until most of the liquid is gone to burn off the alcohol, add the marinara and chili flakes.
  3. Heat the butter and thyme in a separate saucepan, when the butter is hot add the lobster, reduce the heat and stir until cooked.
  4. Spread out the sauce on the bottom of a large dinner plate, add the cooked pasta into the lobster butter thyme sauce, and season with salt and pepper.
  5. Add the pasta and lobster on top of the sauce and finish with the thyme butter.
